As to your second point, the purpose of this part of the definition (‘Denying the Jewish people their right to self-determination’) is almost certainly purely and simply intended to delegitimise any possible rising tide of support for the ‘One-State’ solution. (As opposed to a hypothetical world-universal No-State solution.) But their reply (if any) would be very interesting indeed, yes.
